The Artisanal Roasting Process
Coffee roasting is part thermodynamic science, part tactile intuition. At BREWCO, we honor every farmer’s harvest through small-batch drum profiles calibrated for maximum clarity, sweetness, and distinct regional character.
Ethical Green Bean Sourcing
“Direct-trade micro-lots grown in volcanic high-altitude soils.”
Every roast begins at the farm gate. We partner directly with smallholder growers across Ethiopia, Colombia, and Guatemala who hand-harvest ripe coffee cherries at altitudes exceeding 1,800 meters. Green beans undergo rigorous moisture and density inspection before entering our roastery.

Precision Micro-Batch Drum Roasting
“Custom thermodynamic curves tailored to bean density and moisture.”
Inside our cast-iron drum roaster, Alex Smith manages airflow, drum rotational velocity, and thermal transfer in real time. We capture the exact moment of First Crack, guiding caramelization and acid balance without scorching the bean's delicate essential oils.

“Standardized SCA sensory protocols to grade sweetness, body, and clarity.”
Twenty-four hours post-roast, each batch undergoes blind sensory cupping. We evaluate aroma, clean cup clarity, balanced acidity, and lingering aftertaste to ensure flavor integrity before packaging into valve-sealed craft bags.
